Mexican Wontons: The Perfect Party Staple.

Several years ago a friend of mine shared a fabulous party recipe with me: Mexican Wontons. They are easy, delicious and a crowd favorite. I haven't made them in quite a while, and decided to whip them up for my bible study last night. They did not disappoint, and I had so many people ask me for the recipe, I decided it was blog worthy :)

You'll need the following:

1 package of wonton wrappers (our Walmart sells these in the refrigerated produce section)
1 pound pork sausage, cooked
3 stalks green onions, chopped
1 can rotel, drained.
1 cup shredded cheddar cheese (this is approximate. I generally just pour it in there, and I like more cheese than less).
1.5 Tablespoons ranch dressing

In a cupcake pan, line the cups with the wonton wrappers, forming them to the pan. Bake at 350 degrees for approx. 4 minutes (or until the edges get slightly golden). BE CAREFUL BECAUSE THEY WILL COOK FAST AND EVEN A SECOND OVER CAN CAUSE THEM TO BE NICE AND BLACK (I speak from experience). Allow to cool.

In a separate bowl, mix all of the ingredients until well blended. Scoop into the wonton cups. Serve warm. Pure DELICIOUSNESS.

What's great about this recipe is that you can prepare everything ahead of time, and then reheat the meat mixture in the microwave right before serving. They're perfect for football parties, which are right around the corner-- yay!
