I think I have the opposite of most people in that my 2 year old gives me the biggest challenges at breakfast. The only two things he eats are waffles and oatmeal. So when Mrs. Jana posted this recipe for Chocolate Chip Oatmeal Muffins, I tried them. And B fell in love. I've tweaked the recipe a bit to what we like, and it seriously is a breakfast staple in our house.
Sidenote: Mrs. Jana is a friend of my dad's from LONG ago. Here's a picture of us together when I was just a wee one (actually the same age as B in this pic!) :) It's not the most flattering of any of us, but I was trying to be nostalgic, so work with me.
Back to the muffins.
Here's what you'll need:
and this (realized I forgot the flour until after I had poured most of the stuff into the bowl... clearly I am not the pioneer woman!)
First cream the butter and sugar:
then add the egg:
then blend the dry ingredients together in a separate bowl:
and add alternately with the applesauce to the mixture. It will look like this afterward:
then you add the good stuff. I kind of just hodge podge this, and don't measure stuff. For this batch I used dark chocolate chocolate chips & craisins. Normally I use white chocolate chips, but I was out, so dark chocolate it was. Chocolate is chocolate, right? :)
I also added apple pieces. I just peeled the apple, and chopped it up into small pieces.
(this is cut up in small slices, then I basically minced the apple after this... but again, forgot the picture).

And bake at 350 for 25 minutes. The finished product:
Seriously these are SO yummy, and are relatively healthy (compared to waffles!). Thanks Mrs. Jana for the great recipe. If you ever have a need for a good recipe, you guys should check out her blog-- she's always posting yummy ideas!
Chocolate Chip Oatmeal Muffins
1/2 c. butter
3/4 c. packed brown sugar
1 egg
1 c. whole wheat flour
1 t. baking powder
1/4 t. baking soda
3/4 c. applesauce
1 c. old fashioned rolled oats
chocolate chips, craisins, apple pieces
cream the butter and sugar, add the egg. Combine the next 4 ingredients in a separate bowl; adding alternately with the applesauce to the creamed mixture. Stir in the oats and other ingredients (I kind of just eye the 'extras', but just know that the more you add, the more crumbly they become. Generally I aim for about 1/2 c each of the chocolate chips and craisins, plus the apple pieces).
